I have been making sauerkraut in a crock. How do I know it is ready to can and do you can everything in there?

It has a thick armlet of mold around and on the plate. If I remove the mold and the plate does everything else go in the jars or do you get rid of the top juices and smushy kraut?
Yes, I have canned before. Fair never canned kraut.

We did sauerkraut in a wine barrow. We did a layer of novel shredded cabbage and a small layer of onions sprinkle with warily . Put two pieces of wood to cover it and a huge heavy swing to weight it down. It was in our garage and after a day or two it started to settle and the smushy spirit was skimmed off. We placed it in sanitary jars and placed in the refrigerator when we wanted to use it. It had a very all right flavor not like store bought.

Help - Can I salvage this? I burnt my sauerkraut in the crock pot!?

Is this still eatable? It has sausage and carrots and potatoes too. The middle doesn't look burnt

Making your own sauerkraut is easy and fun

In my mostly German kinfolk, sauerkraut was the meal, not a side dish. Served with pork, for flavoring, some kind of sausage, and mounds of mashed potatoes, it was a feast most of the kith and kin eagerly looked forward to while it roasted slowly in the oven most of the day.

My mother, who had a destroy of Welsh diluting her heavily German blood, would cram the food, but not partake. She would sit at her end of the dinner table with two boiled eggs in front of her and a pained delivery on her face. For days after she would grouse about the smell, and the fact that no mean something when in the year you made the dish, it seemed to revive more than a few flies, which then buzzed around the undertaking lethargically. In my household, sauerkraut was not served during warm-weather months for unprejudiced this reason.

Three years ago, I started dating a man with a strong German inheritance. What else could he be, with a name like Vogelsberger? His mother, Freda, a cooking dynamo who raised five sons, still made her own kraut. Since I never have disoriented my love for the dish, I wondered, would it really be worth the nettle to make?
