what the heck is bisque, as in lobster bisqu or mushroom bisque soup?

I've had them but I don't in the end know exactly what bisque is.


Bisque is a thick creamy soup. It is most of the time served in fancy restaurants in some ultra expensive frame such as Lobster or Abalone (the Abalone Bisque at the Sardine Factory (either in or almost Carmel, CA I'm not sure) is the best I have ever had).

How do I cut the acidity from a tomato bisque soup?

Last gloaming I made a tomato basil bisque and while the flavor was delicious the acidity was a bit too incisive. The recipe calls for canned crush tomatos and tomatoe liquid I also put in whipping cream and added sugar but it didn't seem to aid. Please help as I would like to make this soup for Christmas.


Baking soda will undo the acid. But be careful, it doesn't take much. I'm assuming the total weight of crushed tomatoes and tomato juice is about 1 quart. Mix the crushed tomatoes and tomato essence, then add 1/8 teaspoon baking soda, stir intensively then taste w/ a clean palate. This should be enough, but if it is still too acidic for your taste add another 1/8 teaspoon. Do not add more. Baking soda, in adding to neutralizing the acid also buffers the mixture. This means the aggregate alkalinity is changed as well and you'll begin to taste the baking soda. If this happens you can add lemon liquid a teaspoon at a time to get rid of the baking soda taste. But then you're defeating the apology for adding the baking soda in the first place - LOL. I use this trick when I pressurize lemon ade out of the fake lemon ades like Wilderness-Time. It reduces the acidity and lets more of the lemon flavor be detectable.

Deerfield welcomes noodle restaurant

Noodles & Partnership opened its newest restaurant on Tuesday near the corner of Waukegan and Lake Cook roads in the Deerbrook Mall.

Deerfield Mayor Harriet Rosenthal cut a red ribbon in front of the restaurant at about 10:30 a.m., signifying the house was officially open at the mall, in front of Bed Bath & Beyond.

Rosenthal later enjoyed her first go at Noodles, lunching on the “Veggie Med.” It’s a mix of mushrooms, cucumbers, red onions, and spinach, with Mediterranean dressing on flatbread. She also had a cup of tomato basil bisque soup.

Trustees Mary Melrose Oppenheimer and Barbara Stuthers, who also attended the ribbon sarcastic, dined respectively on a bowl of tomato basil bisque soup, and a “Bangkok Curry,” a dish with broccoli, carrots, onions and red peppers in coconut curry over rice noodles.

The supply replaces Baja Fresh, which operated at the site about a year ago, said Joni Bloom, Noodles’ regional marketing executive. It’s a good geographic fit between its restaurants in Glenview and Lincolnshire, she distinguished.
